WordPress posting: Pick one category or two or three categories?

WordPress allows you to create categories in hierarchy, but ... WordPress also allows you to pick multiple categories when you post a blog entry. When you think about SEO, should you pick one category, two or three categories?

Personally, I use about 10 - 15 categories. I don't really know about the SEO side, but it definetly helps define what each of your posts is really about. Your readers will prefer it too, especially when they are searching for a specific post about a specific theme.
